Our Story

Started at a folding table outside a train station.

Kenji Sato was nineteen, broke, and obsessed with getting broth right. He sold bowls off a card table near a Sapporo train platform for two winters before he had enough saved for a real stove.

Ten years and one plane ticket later, the same three-pot rotation runs behind our counter every night: tonkotsu, shoyu, and whatever miso blend he's testing that week. We don't do lunch. We don't take reservations for parties under four. What we do is keep the burners lit until the last regular finishes their bowl, usually somewhere past midnight.
